Samoa Girl Scout Cookie Hamentaschens

Purim passed, but my friend Merrick and I still wanted to make Hamentaschens. I had recently seen a Buzz Feed article with really cool recipes for Hamentaschens, and they are one of my favorite types of cookies, so we decided to make them a week late. These cookies turned out amazing! Merrick and I split them up between our apartments, so we each took home about 20 cookies each, and they were gone within days.

They are a normal Hamentaschen cookie dough filled with a caramel and toasted coconut filling (we filled a few with strawberry jelly too), they are dipped and drizzled in chocolate and sprinkled with more toasted coconut.

Samoa Hamentaschens (makes 30-40 cookies)

Ingredients:

  • 4 sticks (2 cups) margarine
  • ½ cup sugar
  • 1 (8 oz) container whipping cream
  • 6 cups flour
  • 1 tsp vanilla extract
  • 1 cup caramel (homemade or store-bought melted caramels)
  • 1½ cups shredded toasted coconut
  • 1 cup chocolate chips
  • 1 egg white
